Hey guys, sorry I have not had time to post for a while. Now I am going to post more (hopefully). I just had a surprise birthday party for my friend, so I thought I would give you some pointers on throwing a party. I had a small budget and somehow made it work. I kept the decorating simple. I handmade some posters, and bought some streamers from amazon. That gave it a cool touch that was not too dramatic. The food took most of the money in my budget. I made the cake and cupcakes (I bought a small cake pan so I could make the birthday girl her own little cake). The recipe is as follows:

Wacky Cake

1 1/2 c all-purpose flour (or gluten free flour with an added tsp of xanthan gum)
3/4 c sugar
1/4 c natural cocoa powder
3/4 tsp baking soda
1/2 tsp salt
5 Tb vegetable oil
1 Tb distilled white vinegar
1 teaspoon vanilla
1 c water
confectioner’s sugar (optional)
Adjust oven rack to middle position and heat oven to 350 degrees. Coat 8-inch square (or round) baking pan with nonstick cooking spray. Whisk flour, sugar, cocoa, baking soda, and salt together, add remaining ingredients. Pour into pan.

Immediately put pan in oven.Bake until toothpick inserted in center of cake comes out with a few moist crumbs attached, about 30 minutes. Cool in pan.

We also had fondue, twizzlers and popcorn. That's it! Enjoy!

Scripture Saturday with a Twist!

Hey Guys,
Sorry I couldn't be on here as much. I had two whole weeks of going to a place called Be In Health. It has had a very big impact on my life. It's taught me to trust in God more and have more faith in God, and not to believe the lies of the Devil. I learned that God doesn't want me to have allergies and that he wants me to be healed. He died on the cross for our sins because he loves us so much. He wants us to have an abundant life.
Oh, I forgot to tell you last time. Look at the link I've attached. This lady, Melissa, grew up at my church and now she runs an orphanage in Nicaragua. Mmmmm... Apple Crisp

This is a really good dessert that I love to make with my mom. It's really easy to make. I like to make it by myself sometimes. Maybe you can too!

Allergy Free Apple Crisp(adapted from allrecipes.com Apple Crisp II)

Ingredients:
5 cups of apples, peeled, cored, and sliced
1/2 cup sugar
1-1/2 tsp gluten free all purpose flour
1/2 tsp cinnamon
1/4 cup water
1/2 cup gluten free quick-cooking oats (we used regular, not quick)
1/2 cup gluten free all purpose flour
1/2 cup packed brown sugar
1/8 tsp baking powder
1/8 tsp baking soda
1/4 cup melted butter (Earth Balance Soy Free for us)


Directions:
1) Preheat oven to 350 degrees F.
2) Place sliced apples in 9x13 pan. Mix white sugar and 1-1/2 tsp four, and ground cinnamon together and sprinkle over apples. Pour water evenly over all.
3) Combine oats, 1/2 cup flour, brown sugar, baking soda, baking powder, and melted butter together. (Don't forget to taste test) Crumble evenly over the apple mixture.
4) Bake at 350 degrees F for about 45 minutes.

Scripture Saturday

This verse helps me at night when I'm scared. It helps me to know that God is with me and will help me. This verse also helps me when I eat something new, that I haven't had before. It sometimes can be scary when you first find out that you are allergic to a lot of foods. Then you get use to it and it helps build your character and faith in God.

"Peace I leave with you, my peace I give unto you. Not as the world gives do I give to you. Let not your hearts be troubled, neither let them be afraid." John 14:27

Fast Food Friday

Yum! Chick Fil A is my favorite. Probably because it is one of the closest and one of the only restaurants I can eat at. My order? Delicious fries, fresh squeezed lemonade, and a fruit cup.

What's for dinner?

Tonight we ate hamburgers and broccoli. These burgers were scrumptious! In order for this to be allergy free, we used Food for Life Brown Rice English muffins, allergen free mayonaise found at Earthfare, ketchup, and lettuce. The broccoli is a family favorite. We broil it in the oven with garlic, salt, pepper and olive oil. I hope you like this meal!
